Quiche is one of my favorite go-to meals. It's simple, is easily adapted to accommodate whatever is already hanging around your kitchen and can be "dressed up" for entertaining.
I recently had a craving for a vegetarian quiche and whipped up this simple Sunday brunch delight!
Brocolli & Swiss Quiche
1 frozen pie crust
1 cup shredded Swiss cheese
1 1/2 - 2 cups frozen broccoli florets, thawed and well drained; chop to bite-sized pieces
4 eggs
1 cup half & half
1/2 teaspoon Kosher salt
1/2 teaspoon fresh ground pepper
Remove pie crust from feezer and let thaw.
Heat oven to 375 degrees F.
Layer cheese and thawed broccoli inside pie crust. In medium bowl, beat all remaining ingredients until well blended. Pour over broccoli and cheese.
Bake 35 to 45 minutes or until knife inserted in center comes out clean.
Let stand 5 minutes before serving. Cut into wedges.
